In this video, we will explore the unique technique of cultivating shiitake mushrooms in a forest in Japan, which has been used for thousands of years. Toni Farm will show us how they prepare the logs, inject mushroom spawn, and move them to a shaded area for about two weeks until the mushroom mycelium attaches itself to the wood. They also explain the advantages and disadvantages of greenhouse and traditional cultivation methods, and why naturally grown mushrooms are superior in quality. Harvesting takes place after two years, and the logs are returned to the forest to fertilize the next generation of sawtooth oak trees.
